Bacon Jalapeno Poppers





Bacon Jalapeno Poppers
  • 8 fresh jalapenos
  • 1 package cream cheese
  • 1 ½ cups cheddar cheese, shredded
  • ½ cup bacon crumbles
  • 1 clove garlic, chopped
  • Salt and pepper to taste
  • ½ lb uncooked bacon strips
Slice open the jalapenos and remove the seeds. (Wear gloves when you are handling the jalapenos.)
Combine cream cheese, cheddar cheese, bacon crumbles, garlic, salt and pepper.  Stuff each jalapeno with about a tablespoon of the cheese mixture. Wrap each jalapeno in piece of uncooked bacon.  Secure with a toothpick. Place jalapenos on a rack on a cookie sheet so the bacon drops unto the pan. Broil (or grill) the peppers until the bacon is nice and crispy brown.
